I keep trying o put eyes and a power supply on a new golem, but it says there's no room left. (Even without any other items) any advice?

The most likely scenario I can think of is that you're trying to put a high-level power source on a flesh golem (which does not have the starting carrying capacity for some of the later ones), or that there's armor you put on first (which is not removed by the same method as other items).
